Cooking Instructions
Soak for 8 to 12 hours in plenty of cold water. Drain and rinse thoroughly before cooking. For 1 part beans to 3 parts fresh water, bring to a boil then reduce to a medium simmer. Cook for 45 to 60 minutes, stirring occasionally, until tender and creamy throughout. Add salt towards the end of cooking for best texture. Drain and use in soups, stews, salads, or casseroles.
